Weeknight Loaded BBQ Chicken Sweet Potatoes

Ingredients

4 large sweet potatoes

1 1/2 lb chicken breast

1 tsp smoked paprika

1 tsp onion powder

1 tsp garlic powder

salt & pepper to taste

green onion for garnish

Instructions

1. Preheat the oven to 400 degrees. Line 2 baking dishes with parchment paper and spray with cooking spray.

2. Prick the sweet potatoes all over with a fork and place on one of the prepped baking dishes. Bake for 45-55 minutes until they are tender.

3. Add the chicken to the other prepped baking dish. Toss the chicken breasts with the paprika, onion powder, garlic powder, salt and pepper. Pour in 1/2 the bottle of BBQ sauce and toss, coating the chicken evenly. Bake for 15 minutes, then flip and add the other half of the BBQ sauce. Place back in the oven for another 10 minutes or until the internal temperature reaches 165 degrees.  Remove from the oven and shred the chicken.

4. Remove the sweet potatoes from the oven and make a large slit through the middle. Lightly mash up the insides to make a little extra room and then top with the chicken. Garnish with green onion. Serve warm and enjoy!
