Ingredients
2 c coconut milk
1/3 c chia seeds
1 tsp vanilla extract
2 tbs brown sugar
2 tbs marshmallow fluff
2 tbs dark chocolate syrup + more for garnish
1 c marshmallows
4 sheets of graham crackers
¼ graham cracker dust
¼ c unsweetened coconut shreds
Whipped cream for topping
Instructions
1. In a food processor combine the coconut milk, chia seeds, vanilla extract, brown sugar, marshmallow fluff, and 2 tbs chocolate syrup until the chia seeds are broken down and everything is well combined.
2. Dip the rims of 4 glass cups into chocolate syrup and then into graham cracker dust. Streak the insides of the glasses with chocolate syrup. Put glasses in fridge for a few minutes to let the chocolate syrup set in place. Once the chocolate is set pour in the chia seed mixture and refrigerate for 2 hours, or until the mixture is firm and pudding like consistency.
3. Top with marshmallows (optional to torch, for a campfire feel), more chocolate syrup, graham crackers, and whipped cream.
