Honey-Lime BBQ Beef Tacos

Ingredients

Tacos

1 lb ground beef

1/4 c Dr. Pepper

1/4 c honey

1/2 c ketchup

3 cloves garlic, minced

1 tsp paprika

1 tsp cumin

1 tsp chili powder

1 tsp salt

1 tsp pepper

8 corn tortillas (6in rounds)

1/2 c monterey jack cheese, shredded

2 tbs olive oil

Slaw

3 c purple cabbage, shredded

1 lime, juiced

1/4 c honey

1 tbs cilantro, minced

1 tsp salt

1 tsp pepper

Avocado-Lime Creme

1 avocado

1/4 c greek yogurt

1 lime, juiced

1 tsp olive oil

1 tsp salt

1 tsp pepper

Instructions

1. Preheat oven to 425 degrees. Prepare a baking sheet with non-stick foil.

2. In a large pan over medium-high heat, heat 1 tbs of olive oil and cook the ground beef. While the ground beef is cooking, in a mixing bowl whisk together the honey, dr. pepper, garlic, ketchup, paprika, cumin, chili powder, salt, and pepper.  Cook the beef until it is halfway cooked, about 4 minutes, then pour in the sauce. Toss the ground beef in the sauce coating everything evenly. Cook until it has reached an internal temperature of 145 degrees or for about an additional 4-5 minutes. Remove from heat.

3. Wrap the tortillas in damp paper towels and microwave them 15-30 seconds, so they can easily bend without breaking in half. Place on the foiled baking sheet and lightly drizzle olive oil on to both sides of the tortilla. Place a scoop of the beef mixture on to half a side of each tortilla, sprinkle with cheese and fold the other half over, making a taco shape. Cook in the oven for 5-7 minutes, until the tortillas are nice and crispy.

4. While the tacos bake, make the slaw and creme.

Slaw: In a mixing bowl combine the purple cabbage, honey, lime juice, and cilantro. Mix with a wooden spoon until well combined.

Creme: In a mixing bowl, combine the avocado, olive oil, greek yogurt, lime juice, salt, and pepper. Mix using a fork until it is well combined.

5. Remove the tacos from the oven and top them evenly with the slaw and creme. Serve and enjoy!
