Ingredients

2 tbs olive oil

1 lb ground chicken

1 yellow onion1 green pepper

1 tbs chili powder

2 tsp paprika

1 tsp cumin

1 tsp garlic powder

Salt and pepper to taste

1 (15 oz) can black beans, drained and rinsed

1 bag of tortilla chips

1 1/2 c shredded Mexican cheese blend

Toppings: cilantro, avocado, green onion, limes, and jalapeño lime topping

Jalapeño Lime Topping

1 c fat free plain Greek yogurt

2 limes, juiced

1 jalapeño, diced

salt and pepper to taste

Instructions

1. Preheat oven to 425 degrees. Line a baking sheet with parchment paper and set aside.

2. In a large skillet heat the olive oil over medium high heat. Add the chicken, green pepper, and onion. Cook until the chicken is browned, using a spatula to break up the meat, about 5-7 minutes. Add in the chili powder, paprika, cumin, garlic powder, salt, and pepper. Add 3/4 c of water. Reduce the heat to a simmer and cook for about 8-10 minutes or until the sauce thickens. Stir in the black beans.

3. On the prepped baking sheet, arrange the chips in a single layer. Sprinkle on half of the cheese. Spoon the chicken mixture over and then top with the rest of the cheese. Bake for 8-10 minutes or until the cheese is melted.

4. While the nachos bake, make the jalapeño lime topping. In a bowl mix together the greek yogurt, lime juice, jalapeño, salt, and pepper.5. Top the nachos off with cilantro, limes, green onions, avocado, and the greek yogurt mixture. Serve at your next football watch party and enjoy
