Gluten Free Dark Chocolate Chip Banana Oat Pancakes

Ingredients

2 c old fashion oats

2 bananas

2 eggs

1 tsp vanilla extract

1 tbs milk (I used oat milk)

1/3 c dark chocolate chips

Instructions

1. Using either a food processor or blender, grind the oats into a fine powder.

2. In a bowl combine the oat powder, bananas, eggs, vanilla extract, and milk. Use a fork to mash the bananas and stir until all the ingredients are well combined together. Add in chocolate chips and stir gently.

3. Heat a medium sized pan, coated with cooking spray, on medium heat. Once pan is hot, ladle on 1/2 c size batter scoops. Cook each side for 2-4 minutes, flipping the pancake over with a spatula once the edges are lightly browning and bubbling.

4. Serve with maple syrup, bananas, chocolate chips, powdered sugar, or even just by themselves! Enjoy!
